Duck Delicacies

I have a bit of a thing for duck- eating it that is...

It's amazing, especially drenched in hoi sin sauce.

If there is duck on offer at Sainsburys you can pretty much guarantee I will buy it!
And apart from the obvious Chinese crispy duck pancakes with cucumber and spring onions (yum!), there are so many other things you can do with it.
So here are a couple of really simple but tasty recipes I've tried recently.

Pan fried duck breast salad 

  1. Score the skin of the duck breast lightly with a knife and season. I just added a bit of salt and pepper, but you could use different spices if you wanted a more oriental theme. 
  2. Place the duck breast skin side down in a hot pan (no oil required) on a medium heat and leave for a couple of minutes until the fat starts coming out.
  3. Then turn down the heat and cook for 10-15minutes (depending on the size of your duck breast) until the skin becomes brown and crispy. You might need to tip some of the fat out of the pan (which you can use for cooking other things like roasted vegetables!) as you go along.
  4. Then turn the duck over and cook for 3-5minutes on the other side, depending on how well done you like your meat. Ideally you want the duck to still be a bit pink in the middle when you cut it. 
  5. I then cut my duck into chunks and placed on a bed of salad leaves, and drizzled with hoi sin sauce. So simple and absolutely gorgeous! I also had some corn on the cob with this salad (unpictured) but you could add new potatoes or throw some other vegetables in there too. 

    Duck and broccoli stir fry

    Ok, well this was going to be duck and broccoli but my broccoli had sadly gone yellow and wilted πŸ™ So I improvised with mushrooms, bean sprouts and spinach. I think it would have actually been better with broccoli to give it a bit of crunch so will definitely be trying it at some point!

    1. Remove the skin from the duck and chop into bite sized pieces. Chop your stir fry vegetables.
    2. Heat sesame oil in a wok and add crushed garlic.
    3. Then quickly sear the duck, don't overcook- you want that same tenderness and pink inside that the other dish required. 
    4. Add your chopped vegetables and stir fry for a few minutes
    5. Then add your desired sauce- I cheated and used a packet ginger and teriyaki sauce which is yummy and on a week night I want something quick and easy! 
    6. Meanwhile cook your noodles in a separate pan for 2-3minutes.
    7. Finally plate up and enjoy! You could add crushed cashews or peanuts on top, and mix and match whatever vegetables you fancy.

    It doesn't look very pretty but I promise it tasted good!
