These are my eats from yesterday (Tuesday) again...BreakfastBanana porridge with chia seeds and crunchy peanut butter. Sorry, I know I'm boring, posting the same thing again, but I did say I love it! π
Mid morningCup of tea π
Lunch I met Mark for lunch in town, and we headed to The Pickled Pantry for soup and a sandwich, one of their lunchtime deals. The soup today was roasted butternut squash, and I opted for the chicken and avocado sandwich on multigrain bread- yum!
I also had an elderflower cordial, and afterwards a flat white to pep me up for the afternoon! π
AfternoonAnother cup of tea, and a Nature Valley Oats & Honey cereal bar. I had a pear I was going to eat, but it wasn't ripe yet- still rock solid!
When I got home I cycled to the gym for a workout, and Mark kindly started prepping dinner so it was ready when I got back sweaty and starving!
DinnerChicken and sweet potato curry with peas (sorry it doesn't look very pretty!).
This was supposed to be with rice, but we discovered a little too late that we'd run out! So I just had 1 slice of homemade bread instead π
EveningLater on I had an epic baking session whipping up loads of oaty cookies for work as it's my birthday on Thursday! This recipe is my go-to cookie recipe, and is great as you can make the dough in advance and then they only take 10-15mins to cook- great to have in the freezer in case you need cookies... I've also made them many times before with different additions- the recipe calls for blueberries and pecans, but this batch had coconut and white/milk chocolate chips π
Mark and I had to test some of course- so we each had 1 cookie with some semi-skimmed milk- yum!
I ate a lot of chicken and carbs today (lol), and not much fruit (or veg), but if you don't grab what you want from our office fruit box on Monday morning it disappears so quickly! Fortunately we get another delivery today so I can stash some bits in my desk drawers π
I'll try and make things more interesting next week!
