Meridian Foods: Nut Butter Recipes

I love nut butters!

All nuts and seeds are great sources of protein and energy, and although they contain oils and fats these are unsaturated heart-healthy fats with a whole list of benefits.

Meridian Foods were kind enough to send me some to try - I'm a big fan of their brand! Their products don't use palm oil, and most of them are 100% pure nuts (some have a pinch of sea salt).

Crunchy peanut butter, crunchy cashew butter, and smooth almond butter

Almonds
Almonds are high in fibre, and natural Vitamin E which helps boost the immune system. They're a good source of magnesium, and are high in calcium and phosphorous, which are great for maintaining healthy bones and teeth. 

Cashews

Cashews are technically the seed of the cashew apple. They're rich in a number of trace minerals including iron (vital for the production  of red blood cells), copper (important for maintaining healthy cholesterol levels), magnesium (for cardiovascular health) and tryptophan - which is important for healthy sleep! They also contain good levels of zinc which helps manage hormones.

Peanuts
Peanuts are actually a legume not a nut! They're high in protein, and contain vital essential minerals including magnesium, zinc for hormone production, iodine and selenium for thyroid function, and manganese which reduces anxiety.

Nut Butter Ideas

Apple and almond/cashew butter- either cold slices, or chopped and microwaved with a sprinkle of cinnamon.

Banana and peanut butter- the perfect pre-run snack! Add a slice of toast for a great breakfast.

Porridge- Adding a tablespoon of nut butter to porridge is a great way to have some healthy fats at breakfast, and makes it taste great!

Smoothies- I've added almond butter to my smoothies for extra protein and a more fulfilling breakfast.

Pancakes- Paleo pancakes made with egg, banana, and almond butter. These take a bit of practise as they can fall apart really easily in the frying pan!

Cookies and Muffins
I haven't got around to making any baked goods with my nut butters yet- sometimes it's too easy just to eat it out the jar with a spoon!

    Yes I love cashew butter! Haven't tried any seed butters yet, but will definitely give them a go- although perhaps not pumpkin seed! 😉

    I'm obsessed with nut butter! I love almond, and hazelnut. Currently loving brazil nut too! I like it in my porridge.

    I'm actually a newbie to all nut butters except for Peanut Butter. I've still yet to get round to trying different nut butters but I must get on it! 🙂 my favourite way to have PB is in porridge, on banana slices and with Jam on toast! 🙂

    Ooh nut butters are the best! I have on rice or oatcakes as mid-morning snack and in smoothies. My fave way to enjoy the stuff is in porridge - it's so good and fills you up for ages! Yum!
