Ketchup.
A condiment that is a staple in the fridges and cupboards of so many homes up and down the country.
But did you know you can cook with it too?
Sweet and Sour Chicken
Ingredients:
Sweet and sour sauce
1 tbsp dark soy sauce
1 tbsp light soy sauce
1 tbsp mirin
1 tbsp vinegar
1 tbsp light brown sugar
1 tbsp tomato ketchup
50 ml water
1 tbsp corn flour
Stir fry
1 garlic cloves, finely sliced
25 grams ginger grated
1 onions
1/2 tsp chili flakes
350 grams chicken breasts, diced
1 pepper
50 grams water chestnuts
3 tbsps pineapple juice
1 can pineapple chunks
Method:
For the Sauce
1. Mix all of the ingredients in a small saucepan with the exception of the cornflour and bring to a boil over a medium high heat
2. Mix the cornflour with 1 further tablespoon of cold water to form a paste and when the sauce is boiling add it into the sauce and stir until the sauce begins to thicken and set aside
For the Stir-Fry
1. Throw the garlic and ginger into a hot wok with a splash of oil and stir fry for 30 seconds.
2. Add the onion wedges and chilli flakes, then stir fry for 2 minutes.
3. Add the chicken and stir fry for 3 minutes, before adding the diced pepper and frying for a further 2 minutes
4. Reduce the heat to medium and add the sauce along with the water chestnuts, pineapple chunks and the juice from the pineapple chunks.
5. Allow to simmer until the chicken is cooked through, this should take no more than 5 minutes.
6. Serve with rice or noodles.
The final dish doesn't look particularly beautiful but it did taste great! I might add in some more colourful vegetables next time - some mange tout or sugar snap peas- a splash of green would make it look a little less beige and add in another of your five a day.
