Woah! It’s Wednesday already? It’s always nice when the week goes quickly, and today I’m super excited because I should be picking up my sexy bike for the London Duathlon this evening! Yay!

Breakfast
Egg frittata muffin with raspberries.
Mid-morning snack
Green tea and a banana
Lunch
Tuna and carrot salad with lettuce, cucumber, cherry tomatoes and cashew nuts
Afternoon snack
Cup of tea and 2 white chocolate and cranberry cookies from my Foodie Penpal parcel!
Dinner
I went to Crossfit after work, and ate an apple on the train home, followed by these leftovers from Sunday night- stir fry beef with chilli and lime, cooked with red pepper, onions, mushrooms and grated carrot
I have a couple of recipes I want to share with you this week!
Egg Frittata Muffins
The muffins were based on this recipe, although mine don’t look as pretty! Haha. I also used bacon instead of sausage, and mushrooms instead of red pepper. But I reckon you could put in pretty much any veg/meat combo and they’d still taste good!
Just mix everything in with your eggs (I used 7 to make 6 muffins purely because I didn’t want to leave an odd egg!), spoon into a muffin tin and cook for 20-25mins until the egg is set.
Then you can store them in the fridge and grab and go!
The second creation for today is my Easy Vegetable Beef Stir Fry.
I used a packet of precut beef, marinated in chilli and lime from Waitrose to save time. I cooked onions and garlic first, before adding the beef.
Once the meat was browned, I tossed in some chopped pepper, mushrooms and grated carrot. Grating the carrot meant it cooked much quicker!
Finally I added 2 generous handfuls of spinach, which then mostly disappeared as it wilted!
And serve! This made 2 portions, and you could always add noodles or rice to bulk it out more.

Oooh the frittatas and chilli look lovely – I've been wanting to try frittatas for ages. Gonna go buy a muffin tin and get going!
